Sky+HD used to have a Challenge Catch-up section as well, but not sure if that's still there.

It's still there, and seems to work. It's next to an option for Pick, which obviously doesn't come up with anything.

That's not obvious at all - I'd have thought they just forgot to replace the logo graphic and would expect Sky Mix programming to be there. It's odd that it's just empty.

Challenge has a wonderfully varied schedule for Christmas Day again... Chase as far as the eye can see, a few Celebrity and Family chases pepped with a Weakest Link episode, a Millionaire episode and one of the Bullseye Christmas Specials, though it doesn't say which one (though as its scheduled for an hour its probably the 1984 special).

That's a well varied selection compared to some recent years... am I making it up or did they once show The Chase for 3 days straight from Christmas Eve through to Boxing Day?

As far as Bully's concerned - Series 4 Episode 17, which would probably suggest the 1984 edition (with Rod Hull, Tommy Boyd etc.)
It's probably been asked before but are there any of the Christmas specials missing per se?
Here's one of the unrepeated specials from 1987 (they sure enjoyed crossing over with other Central shows...)

The 1991 Bullseye Christmas special if shown would definitely need to have stuff edited out as there's a Jimmy Savile impersonation halfway through it.

Considering they've left an episode of Family Fortunes intact where Les Dennis and a contestant talk about how great Rolf Harris is, I'd be surprised if they'd bother.
